Grand Final brunch at our place...
Today is the AFL (Australian Football League) Grand final the holiest of holy days for fans (I am not), but living in a houseful of men, this becomes an excuse for a barbecue. This year we decided to try something different - a brunch that took literally 20 minutes to prepare and serve. No prizes for guessing who had to prepare it. Anyway, judging from it's popularity, I decided to share the 'recipes'...
Sunshine cocktail
Ingredients
1 tin pineapple pieces in natural juice
1 tin crushed tomato
1 large navel orange
1/2 tsp Indian chaat masala (paprika or pepper, Himalayan salt and powdered cumin if you don't have chaat masala)
Method
Whiz in a blender until smooth and serve
Ham, cheese and egg pies (Serves 4)
Ingredients
4 slices of crusty white bread
4 eggs
8 thin slices proscuitto (Italian dry cured ham)
Grana Padano cheese (Grainy hard Italian cheese)
Dijon mustard
Melted butter or ghee
Weight watchers baked beans (one tin)
Assorted lettuce leaves
Tomatoes
Lemon
Salt and pepper to taste
Method
1. Heat oven to 240 degrees Centigrade
2 Brush 4 pie pans with melted butter or ghee
3. Cut each slice of bread into 4 pieces and mould to fit the base and sides of the pie pans
4. Brush bread with melted butter or ghee
5. Dot mustard on each piece of bread
6. Arrange proscuitto slices across bread
7. Break an egg into each 'pie'
8. Top with a thin slice of Grana Padano cheese
9. Bake for 10 minutes (or until bread slices begin to brown and eggs are 'set')
10. Serve with baked beans and a tomato and lettuce salad dressed with lemon, salt and pepper
